Approximate pronunciation

This is an English approximation: round your lips for the Turkish ö sound. Listen for the Turkish pronunciation. The written guide is an approximation for English readers.

These everyday Turkish köfte are small, flattened meatballs with parsley, onion and warm cumin. Their oval shape gives plenty of surface for browning in a hot pan. Serve them with a salad, a spoonful of cacık and bread for a straightforward Turkish-style meal.

Pan-seared oval Turkish köfte with grilled tomatoes, green peppers and sumac onions

Köfte is a whole family of dishes rather than one fixed recipe. This is a simple home-style pan-cooked version, using beef and a little breadcrumb to hold the mixture together. A short rest in the fridge makes the shaped pieces easier to handle.

Ingredients

How to make Köfte

  1. Combine the mixture

Put the beef, squeezed onion, breadcrumbs, garlic, parsley and seasonings in a bowl. Mix and knead with clean hands for 2–3 minutes, until the ingredients are evenly distributed and the mixture holds together.

  2. Shape and chill

Divide into about 16 portions. Shape into small flattened ovals, roughly 1.5 cm / ½ inch thick. Place on a plate, cover and refrigerate for 30 minutes. This rest is included in the total time.

  3. Sear in batches

Heat a heavy frying pan over medium-high heat and brush with the olive oil. Add the köfte with space between them. Cook for about 4–5 minutes on each side, adjusting the heat so the outside browns without burning.

  4. Check and serve

Check the center of several of the thickest pieces with a food thermometer. Ground beef must reach 71°C / 160°F. Transfer to a clean platter and serve with bread, sliced tomato, onion salad or cacık. Cook the remaining batch as needed.

A few helpful kitchen notes

  • Use a little fat

Very lean beef can give dry köfte. A mixture with roughly 15–20% fat stays more tender.

  • Keep the size consistent

Even thickness matters more than a perfect oval. It helps all the pieces cook through at about the same rate.

  • Changing the meat

Beef and lamb can be mixed in equal quantities. Ground poultry is a different adaptation and must be cooked to 74°C / 165°F rather than the beef temperature.

How to store and reheat Köfte

Refrigerate cooked köfte promptly and use within 3 days. Reheat to 74°C / 165°F. Freeze cooled cooked köfte for up to 3 months for best quality. Keep raw meat separate from salads and ready-to-eat foods.

Köfte: questions and answers

Do köfte need an egg?

Not in this recipe. Mixing the meat well, using finely grated onion and resting the shaped pieces helps the mixture hold together.

Can I grill them?

Yes. Oil a clean, hot grate and turn the köfte gently once they release. Check the internal temperature rather than relying on browning.

Can I make them ahead?

Shape, cover and refrigerate the mixture up to a day before cooking. Keep it cold until you are ready to cook.
