Tas kebabı has regional and household variations. Some preparations cook meat beneath an inverted bowl, while others are made as a pot stew. This is the everyday tomato-and-pepper pot version, not a claim to reproduce one particular regional bowl-cooking method. Potatoes and rice are not part of this base recipe; serve a separate side if desired.

Ingredients
How to make Tas Kebabı
Brown the beef
Cut the beef into roughly 2.5 cm (1 in) cubes and pat dry. Heat the olive oil in a heavy lidded pot about 22 cm (8½ in) wide over medium-high heat. Brown the beef in two batches, about 8–10 minutes in total, turning to color several sides. Transfer to a plate; the meat is not yet fully cooked.
Soften the aromatics
Lower the heat to medium. Add the butter and onion to the pot and cook for 5 minutes, stirring. Add the garlic and cook for 1 minute, then stir in the tomato paste for 1 minute. Keep the browned residue golden-brown rather than burnt; lower the heat if necessary.
Braise gently
Return the beef and its juices. Add the tomatoes, measured hot water, salt and black pepper, scraping the bottom to release the browned residue. Bring to a boil, then cover and reduce to a gentle simmer. Cook for about 90 minutes, stirring occasionally and checking that the pot does not dry out. If needed, add hot water in 60 ml (¼ cup) portions.
Add the peppers and finish cooking
Stir in the mild green peppers and simmer, covered, for another 20–30 minutes, until the peppers soften and a fork passes easily through the beef. If the beef is still chewy, continue gently simmering and check every 15 minutes, adding a little hot water as needed. Tenderness, not the clock alone, determines when it is ready.
Adjust the sauce and serve
If the sauce is thin once the beef is tender, uncover and simmer for about 5 minutes to reduce it. It should coat the meat without becoming dry. Remove from the heat, stir in the parsley and rest for 5 minutes. Serve hot with a separate pilaf or salad; those accompaniments are not included in the recipe quantities.

A few helpful kitchen notes
Beef cut and timing
Chuck or another cut suited to slow braising is preferable to lean steak cubes. Cooking time is approximate and depends on the cut, cube size and simmer. Do not add flour to thicken the sauce; reduce it only after the meat is tender.
Dietary notes
Use the specified gluten-free-labelled tomato paste and pure black pepper, and check any replacement packaged ingredients. The gluten-free label describes the specified ingredients, not certification or an absence of cross-contact. Butter adds milk; for a dairy-free preparation, replace its full 15 g (1 tbsp) with 15 ml (1 tbsp) olive oil.
Heat level
Mild, with mild green peppers and no added chili. Do not substitute hot green peppers if keeping it mild. Gluten-free-labelled chili flakes can be offered separately for those who prefer heat.
Water, not stock
Plain water keeps the ingredient list and salt level predictable. If using stock instead, check its gluten status and salt content, and reduce the added salt accordingly.
How to store and reheat Tas Kebabı
Divide leftovers into shallow containers and refrigerate at 4°C (40°F) or colder within 2 hours of cooking, or within 1 hour above 32°C (90°F). Use within 3 days, or freeze for up to 3 months for best quality. Thaw in the refrigerator. Reheat gently with a splash of water, stirring, until the center reaches 74°C (165°F). Discard any portion left out beyond these time limits.
Tas Kebabı: questions and answers
Is tas kebabı a grilled kebab?
Not in this version. It is a slowly simmered meat dish with a tomato sauce, prepared in a covered pot rather than on skewers.
Why is my beef still tough after the suggested time?
Braising cuts vary. Keep the liquid at a gentle simmer, make sure the pot is not dry and continue cooking until a fork enters easily. Increasing the heat sharply is not a reliable shortcut.
Can I cook it a day ahead?
Yes. Cool and refrigerate it promptly using the storage guidance, then reheat thoroughly before serving. The peppers will become softer on reheating; avoid boiling hard just to reduce the sauce.
