Across much of Türkiye, this plain, bright style of piyaz is served beside köfte and other grilled meats or included in a meze spread. It is distinct from Antalya piyazı, a registered regional preparation whose small beans are coated in a tahini-based tarator sauce. This recipe follows the widely served lemon-and-vinegar version and keeps the beans whole enough to hold their shape.

Ingredients
How to make Piyaz
Soak the beans
Put the beans in a large bowl, cover with at least three times their volume of cold water and soak for 8–12 hours. Drain and rinse; discard the soaking water.
Cook until creamy but intact
Transfer the soaked beans to a saucepan and cover with fresh water by about 5 cm (2 inches). Bring to a boil, skim any foam, then simmer gently and partially covered for 45–60 minutes. Begin checking at 40 minutes. Add 1/2 teaspoon of the salt for the final 10 minutes. Drain when the centers are creamy but the beans still hold their shape, then let them cool for 10 minutes.
Soften the onion
While the beans cook, put the sliced onion in a bowl with 1/4 teaspoon of the salt. Rub gently for about 1 minute, rest for 5 minutes, then rinse briefly under cold water and squeeze dry without crushing the slices.
Boil the eggs and prepare the vegetables
Lower the eggs into simmering water and cook for 10 minutes. Transfer them to cold water, peel and quarter. Wash and dry the tomatoes and parsley, then dice the tomatoes, chop the parsley and halve the olives.
Mix the dressing
Whisk the olive oil, lemon juice, vinegar, sumac, black pepper and the remaining 1/2 teaspoon salt until combined. Taste: it should be distinctly tangy because the beans will soften the acidity.
Dress, rest and serve
Gently toss the slightly warm beans with half the dressing and rest for 5 minutes. Fold in the onion, tomatoes, parsley and olives with the remaining dressing. Rest for 10 minutes, adjust salt or lemon if needed, then arrange the egg quarters on top and serve.

A few helpful kitchen notes
Regional style
This is the classic lemon-and-vinegar bean salad. Antalya piyazı is a distinct regional dish made with small beans and a tahini-based tarator sauce.
Canned-bean shortcut
Replace the dried beans with two 15-ounce (425 g) cans of plain white beans, about 500 g drained. Rinse, drain well and warm gently for 5 minutes before dressing; skip the soak and bean-cooking steps.
Dietary notes
The base recipe is vegetarian and contains no gluten-containing ingredients. If cross-contact matters, check the labels on canned beans, vinegar, olives and ground spices. This is not a gluten-free certification; the recipe contains egg.
Heat level
No added chili. Offer pul biber at the table for a hotter serving without changing the base salad.
How to store and reheat Piyaz
Refrigerate within 2 hours in a shallow airtight container and use within 3 days. For the best texture, store the egg separately and add it when serving. The tomato and parsley soften over time, and freezing is not recommended. Discard salad left at room temperature for more than 2 hours, or more than 1 hour above 32°C (90°F).
Piyaz: questions and answers
Is this the same as Antalya piyazı?
No. This is the widely served lemon-and-vinegar white bean salad. Antalya piyazı uses a tahini tarator sauce and is a distinct regional preparation.
Can I use canned white beans?
Yes. Use two 15-ounce (425 g) cans, about 500 g after draining. Rinse them well and warm them briefly so they absorb the dressing.
Why rub the onion with salt?
A short salt rub softens the raw onion's sharpness while leaving it crisp. Rinsing afterward prevents the onion from making the whole salad too salty.
Can I make piyaz ahead?
Cook and dress the beans up to one day ahead. Add the tomato, parsley, olives and egg closer to serving so their color and texture stay fresh.
