Kapama names a family of covered or enclosed dishes rather than one identical recipe across Türkiye. The Denizli record places chicken thighs in an earthenware pot with tomatoes, garlic, tomato paste, olive oil, salt, pepper and water, then seals the lid with dough and cooks it gently for an hour. This version keeps that ingredient profile and sealed-pot logic but uses a heavy lidded casserole, so no sealing dough is needed. It should not be confused with rice-based regional kapama: the official Bilecik geographical-indication document describes meat and rice prepared separately and then baked together, with chicken among the permitted meats. Denizli-style Tavuk Kapama contains no rice in the pot; serve rice or bread alongside only if you wish.

Ingredients
How to make Tavuk Kapama
Heat the oven and choose the pot
Heat the oven to 180°C/350°F. Choose a 4–5 litre (4–5 quart) heavy casserole or oven-safe clay pot with a tight-fitting lid; the thighs should fit in one snug layer without overlapping heavily.
Season the chicken
Pat the chicken dry with paper towels; do not rinse it. Rub all over with the salt and black pepper, then arrange the thighs skin-side up in the casserole. Wash your hands, knife, board and any surface that touched the raw chicken with hot soapy water.
Make the tomato mixture
Whisk the tomato paste into the 400 ml (1 2/3 cups) hot water until smooth. Stir in the chopped tomatoes, crushed garlic and olive oil. Pour the mixture around and between the thighs, keeping most of the skin exposed above the liquid.
Seal and bake gently
Cover the casserole tightly. If the lid is loose, place a sheet of baking parchment under it and crimp foil firmly around the rim. Bake on the middle rack for 55–65 minutes without lifting the lid.
Check doneness and brown
Open the pot carefully, directing the steam away from you. Insert an instant-read thermometer into the thickest part of the largest thigh without touching bone; it must reach at least 74°C/165°F. If it has not, cover and bake for 5–10 minutes more. Once safe, raise the oven to 220°C/425°F and bake uncovered for 8–10 minutes, until the skin colors and the sauce bubbles.
Rest and serve
Rest uncovered for 10 minutes. Skim a little surface fat if desired, spoon the tomato-garlic sauce around each thigh and serve hot. Rice pilaf, crusty bread or a sharp shepherd’s salad can be offered separately.

A few helpful kitchen notes
Regional identity
This is the tomato-and-garlic Denizli version. Some dishes called kapama elsewhere combine meat and rice, but adding rice to this pot would change both the liquid balance and the regional recipe followed here.
Clay pot care
Use only a clay pot approved for your oven and follow its soaking and preheating instructions. To avoid thermal shock, never place a cold clay pot in a fully heated oven unless its maker explicitly permits it; a Dutch oven or enamelled casserole is the reliable alternative.
Dietary notes
The recipe contains no wheat, dairy, egg or nuts. It is gluten-free only when the tomato paste and any packaged spices are labelled gluten-free and cross-contact is controlled. The traditional flour-dough lid seal is deliberately replaced with a tight lid, parchment and foil.
Heat level
No added chili. For mild warmth, add 1/2 teaspoon mild pul biber with the black pepper; for a clearly hot version, use 1 teaspoon hot pul biber.
How to store and reheat Tavuk Kapama
Divide leftovers into shallow covered containers and refrigerate within 2 hours of cooking, or within 1 hour when the ambient temperature is above 32°C/90°F. Keep at 4°C/40°F or colder for no more than 3–4 days. Reheat chicken and sauce until the center reaches 74°C/165°F. Freeze within the safe refrigeration window if keeping longer; discard portions left out beyond the stated limits.
Tavuk Kapama: questions and answers
Does Tavuk Kapama always contain rice?
No. The name covers distinct regional dishes. This Denizli version is chicken in a sealed pot with tomato and garlic and has no rice, while documented versions such as Bilecik Kapaması bake meat and rice together.
Can I use boneless chicken thighs?
Yes, but they cook faster and give the sauce less body. Begin checking after 35–40 minutes under the lid and still require an internal temperature of 74°C/165°F before the uncovered finish.
What if my casserole lid is not tight?
Lay baking parchment over the pot, fit the lid on top and crimp foil around the rim. The goal is to limit evaporation during the covered phase; do not use a plastic wrap or a lid that is not oven-safe.
