Registered as Oğuzeli Ezo Gelin Çorbası, this soup is associated with Oğuzeli in Gaziantep and is now cooked throughout Türkiye. The registered formula brings together red lentils, rice, bulgur, onion, garlic, pepper paste, dried herbs and lemon. This home-cook version keeps that grainy, cohesive character while using olive oil and water.

Ingredients
How to make Ezogelin Çorbası
Rinse the grains
Put the lentils, bulgur and rice in a fine-mesh sieve. Rinse under cool running water until the runoff is nearly clear, then drain well.
Soften the aromatics
Warm the olive oil in a large heavy saucepan over medium heat. Add the onion and cook for 6 minutes, stirring often, until soft but not browned. Add the garlic and cook for 30 seconds.
Fry the pepper paste
Add the sweet pepper paste and cook for 1 minute, stirring it through the oil until fragrant and evenly distributed.
Coat the lentils and grains
Add the drained lentils, bulgur and rice. Stir for 1 minute so every grain is coated with the pepper-paste mixture.
Build the soup gradually
Pour in 480 ml (2 cups) of the hot water and bring to a gentle simmer. Cook for 8 minutes, stirring from the bottom. Add the remaining 1.12 litres (4⅔ cups) hot water in 3 additions over 25 minutes, letting the soup return to a simmer each time. Stir often, especially near the end, until the lentils have broken down and the rice and bulgur are very tender.
Season and finish
Stir in the salt, pul biber, oregano and dried mint. Simmer for 4 minutes. Remove from the heat, stir in the lemon juice and add a little more hot water if the soup is thicker than a pourable porridge.
Serve
Ladle into warm bowls and serve at once with lemon wedges. Keep the visible grains and lentils intact rather than blending the soup smooth.

Ingredient Substitutions
These swaps change flavor or texture as described. Keep the original ingredients for the closest version of the dish.
Pul biber
Use the same amount of mild paprika for color and a gentler flavor. For heat, add a small pinch of chili flakes, then taste; chili flakes can be much hotter.
Turkish red pepper paste
Use the same quantity of tomato paste, then add mild paprika to taste. This gives a more tomato-forward flavor and will not reproduce the full pepper flavor.
Fine bulgur
Look for fine bulgur labelled köftelik or #1. Coarse pilaf bulgur needs different hydration and cooking; do not replace it directly in this recipe.
A few helpful kitchen notes
Texture
The soup should be thick enough to coat a spoon but still pour easily. It continues to thicken as it stands; loosen it with hot water a little at a time.
Heat level
Medium. The base recipe uses sweet pepper paste plus 1 teaspoon pul biber. For a milder bowl, omit the pul biber; for more heat, use hot pepper paste or add another ½ teaspoon pul biber.
Dietary
Vegan when made with water, olive oil and a pepper paste whose label contains no animal ingredients. Bulgur is wheat, so this recipe is not gluten-free and is not suitable for coeliac diets.
Pepper paste substitute
If Turkish sweet pepper paste is unavailable, use 1 tablespoon tomato paste mixed with 1 teaspoon sweet paprika. This is a practical substitute, not the registered traditional formula, and the flavor will be less pepper-forward.
How to store and reheat Ezogelin Çorbası
Transfer leftovers to shallow containers, refrigerate within 2 hours at 4°C/40°F, and use within 2 days. Reheat only the amount needed to 74°C/165°F, stirring and adding water as required; avoid repeatedly reheating the whole batch.
Ezogelin Çorbası: questions and answers
How is Ezogelin Çorbası different from Mercimek Çorbası?
Ezogelin includes rice and bulgur as well as red lentils, and is seasoned with pepper paste, garlic, mint and oregano. It is normally left textured, whereas many versions of mercimek soup are blended smooth.
Can I blend Ezogelin soup?
For its traditional character, leave the rice and bulgur visible. If you prefer a slightly smoother base, give the soup only one or two brief pulses with a stick blender rather than puréeing it completely.
Can I omit the bulgur to make it gluten-free?
Bulgur is part of this dish's defining grain mixture. Omitting it changes the recipe, and this version should not be labelled gluten-free; choose a separately developed gluten-free lentil soup instead.
Can I make Ezogelin Çorbası ahead?
Yes. It thickens in the refrigerator, so cool it promptly, refrigerate within 2 hours and use within 2 days. Add water while reheating and bring the portion to 74°C/165°F.
