Biber Salçası: Turkish Pepper Paste and Substitutes
Biber salçası is a concentrated Turkish red pepper paste used to build savory flavor. Tatlı biber salçası is the mild version; acı biber salçası is hot. It is different from tomato paste, although tomato paste can sometimes provide a practical, clearly different substitute.
Choose mild or hot deliberately
Read both the name and the ingredient list. Salt levels and concentration vary between brands. A spoonful of hot paste can change a mild dish substantially, so do not replace mild with hot by equal volume without considering the finished dish.
A cupboard alternative
For a cooked sauce or sauté, start with a little less tomato paste than the pepper paste called for. Add sweet paprika gradually, then adjust seasoning and liquid according to the recipe's texture. This is an adaptation: the result will taste more strongly of tomato and will lack some of the concentrated pepper character.
When another red paste is not the same
Harissa and other chili pastes may include garlic, spices or much more heat. Roasted pepper spreads can be wetter and less concentrated. They can create a good dish, but require their own seasoning adjustments rather than a blind one-for-one substitution.
Use and keep it as directed
Follow the recipe's instructions for adding the paste to a sauce, grain dish or dressing. Taste a cooked sample of the dish before adding extra salt. For storage after opening, follow the manufacturer's label, use a clean utensil and do not assume homemade paste has the same keeping time as a commercial product.
| Ingredient or option | When to use it | What changes |
|---|---|---|
| Tatlı biber salçası | Recipes calling for mild pepper paste | A concentrated pepper flavor without intentionally adding hot chili. |
| Tomato paste with sweet paprika | A practical adaptation for cooked dishes | More tomato-forward; adjust concentration, liquid and salt. |
| Harissa or another chili paste | Only when its seasoning suits the dish | Heat and added spices can change the recipe significantly. |
