The İzmir Culture Portal records the practical details that define this dish: collect or buy the blossoms while they are still open, remove the inner yellow part without tearing the petals, partly cook the rice filling and close each flower by overlapping its tips. The Aydın provincial source documents a richer local variation with tomato, lemon, sugar and optional pine nuts and currants. This version follows İzmir's herb-forward filling, while GoTürkiye places stuffed zucchini blossoms among the olive-oil dishes associated with the Aegean and Mediterranean coasts.

Ingredients
How to make Kabak Çiçeği Dolması
Clean the blossoms
Work with one flower at a time. Gently open the petals, pinch away the small green sepals around the base and remove the central stamen or pistil with a teaspoon without tearing the flower. Rinse very gently in cool water and drain upside down on a clean towel.
Start the filling
Warm 45 ml/3 tablespoons of the olive oil in a wide pan over medium-low heat. Add the onion and cook for 5–6 minutes until soft but not browned. Add the rice and stir for 2 minutes, until the grains look slightly translucent at the edges.
Partly cook and cool
Add the scallions, 120 ml/½ cup of the warm water, 1 teaspoon of the salt and the black pepper. Cover and cook over low heat for 5 minutes, until the water is absorbed but the rice is still firm. Remove from the heat, fold in the dill, parsley and mint, and cool for 15 minutes.
Fill each flower
Hold a blossom open and place one level teaspoon of filling near the base. Do not pack it. Fold the petal tips over one another to close the top. Repeat with the remaining blossoms and filling.
Arrange the pot
Set the filled blossoms snugly in one layer in a wide, shallow saucepan, with the folded ends facing sideways or down so they stay closed. Drizzle over the remaining 45 ml/3 tablespoons olive oil. Dissolve the remaining ½ teaspoon salt in the remaining 240 ml/1 cup warm water and pour it around, not directly over, the flowers. Place a heatproof plate on top as a light weight.
Cook gently
Bring the liquid just to a simmer over medium heat. Cover, reduce the heat to low and cook for 20–25 minutes, until the rice is tender and most of the liquid has been absorbed. If the pot dries before the rice is tender, add 2–3 tablespoons hot water around the edge.
Rest and serve
Remove the pot from the heat and rest, covered, for 20 minutes. Lift the blossoms carefully onto a platter with a spoon. Serve warm, at room temperature or chilled, and refrigerate within 2 hours if not serving immediately.

A few helpful kitchen notes
Choosing blossoms
The İzmir source notes that flowers are gathered early, before they close. Choose fresh, open blossoms without bruised or slimy petals and cook them the day you buy or pick them.
Do not overfill
The rice is only partly cooked before stuffing and needs space to swell. One level teaspoon per blossom keeps the petals intact and the filling tender.
Heat level
No added chili. For gentle warmth, mix up to ½ teaspoon pul biber into the cooled rice filling; this changes the mild base recipe.
Dietary notes
The base recipe uses vegetables, rice, herbs and olive oil, so it is vegan, vegetarian and naturally gluten-free. It is not certified against cross-contact; check rice and spice packaging when that matters.
How to store and reheat Kabak Çiçeği Dolması
Refrigerate within 2 hours in a covered shallow container at or below 4°C/40°F and use within 3–4 days. Kabak Çiçeği Dolması is usually served cool or at room temperature. If reheating, warm gently until the center reaches 74°C/165°F; repeated heating can tear the petals.
Kabak Çiçeği Dolması: questions and answers
Where can I buy zucchini blossoms?
Look at farmers' markets, well-stocked produce shops or gardens that grow untreated squash. Buy them open and fresh, keep them cool, and use them the same day when possible.
Can I use long-grain rice?
Yes, but short-grain rice binds the herbs and onion more neatly. With long-grain rice, begin checking a few minutes earlier and add hot water only if the grains remain firm.
Why is the rice partly cooked before stuffing?
The petals cook quickly. Starting the rice in the pan helps the grains finish at the same time as the delicate blossoms without overcooking the flowers.
