Approximate pronunciation

Turkish c sounds like the j in ‘jam’; ç sounds like ‘ch’. The final ı is approximated here as ‘uh’. The written guide is an approximation for English readers.

Mercimek çorbası is the kind of soup that makes a modest bag of lentils feel like a proper meal. Red lentils break down as they cook, giving the soup its smooth body without any cream. A squeeze of lemon at the table is the finishing touch.

Smooth golden Turkish red lentil soup with pepper butter and a lemon wedge

There are many home-style versions of Turkish lentil soup. This one uses carrot for a little sweetness and a small amount of tomato paste for depth. It is blended until smooth, then finished with a quick pepper butter. Leave off the butter and use vegetable stock for a fully plant-based bowl.

Ingredients

How to make Mercimek Çorbası

  1. Soften the vegetables

Heat the olive oil in a large saucepan over medium heat. Add the onion and carrot and cook for 5–6 minutes, stirring, until the onion softens. Stir in the tomato paste and cumin for 1 minute.

  2. Simmer the lentils

Add the rinsed lentils, stock and salt. Bring to a boil, then lower the heat and simmer, partly covered, for 20–25 minutes. Stir occasionally. The lentils should fall apart easily and the carrot should be completely tender.

  3. Blend until smooth

Take the pan off the heat. Blend carefully with an immersion blender, keeping the blade submerged to avoid splashes. Add hot water a little at a time if the soup is too thick. Taste and adjust the salt.

  4. Finish and serve

Melt the butter in a small pan over low heat. Stir in the pul biber for about 15 seconds, then remove from the heat before the pepper burns. Spoon over the soup and serve with lemon wedges.

A few helpful kitchen notes

  • Rinse first

Rinse the lentils in a fine sieve until the water is mostly clear. Pick out any stones or discolored pieces before cooking.

  • Use the right lentils

Dried split red lentils give the intended smooth texture. Green or brown lentils need different timings and will change the color and flavor.

  • No immersion blender?

Let the soup cool slightly and blend in small batches in a blender suitable for warm liquids. Follow the blender’s instructions and never seal very hot soup in a closed blending cup.

How to store and reheat Mercimek Çorbası

Refrigerate promptly in shallow covered containers and use within 3 days. Freeze for up to 3 months for best quality. Reheat to 74°C / 165°F, stirring in extra water as needed.

Mercimek Çorbası: questions and answers

Does Turkish lentil soup need flour?

Not in this version. The red lentils thicken the soup naturally when they soften and are blended.

Can I make it vegan?

Yes. Use vegetable stock and replace the finishing butter with olive oil.

Why did my soup turn very thick?

Lentils absorb liquid as they stand. Stir in hot water until the soup flows easily from a ladle, then check the seasoning again.
