Türkiye’s Culture Portal records Taratorlu Börülce as a traditional Muğla vegetable dish, also known locally as börülce ekşilemesi or teltorlu börülce. Here, tarator does not mean a yogurt sauce: it is the cooked, garlicky, sour tomato mixture that coats the beans. The official method boils the cowpeas first, builds the sauce in a wide pan and finishes the two together for 8–10 minutes; it also notes that the dish may be served hot or cold. This home version keeps those proportions and sequence while giving the cooking liquid a measured starting point.

Ingredients
How to make Taratorlu Börülce
Prepare the cowpeas
Bring a large pot of water to a boil. Rinse the cowpea pods under running water without soap, trim the ends and pull away any tough strings. Cut the pods into 4 cm/1½-inch pieces.
Boil until tender
Add the cowpeas to the boiling water and cook for 8–12 minutes, until tender but still holding their shape. Reserve 480 ml/2 cups of the cooking water, then drain the pods well.
Start the sauce
Warm the olive oil in a wide, deep sauté pan over medium heat. Add the onion and cook for 5–6 minutes until softened but not browned. Add the garlic and stir for 30 seconds. Sprinkle in the flour and cook, stirring, for 1 minute so no dry patches remain.
Cook the tomato base
Stir in the tomato paste and sweet ground red pepper for 30 seconds. Add the diced tomatoes and cook for 6–8 minutes, stirring occasionally, until they collapse and the mixture looks thick and glossy.
Balance the sour sauce
Stir in the pomegranate molasses, salt and 300 ml/1¼ cups of the reserved cooking water. Simmer for 4–5 minutes. The sauce should be loose enough to coat the cowpeas; add more reserved water in small amounts only if needed.
Finish and serve
Fold in the drained cowpeas and simmer for 8–10 minutes, stirring gently, until the sauce clings to the pods and they are fully tender without becoming mushy. Taste and adjust only the salt or sourness. Serve warm, or cool promptly and refrigerate before serving cold.

Ingredient Substitutions
These swaps change flavor or texture as described. Keep the original ingredients for the closest version of the dish.
Pomegranate molasses
If unavailable, omit it and add lemon juice gradually to taste. This is a flavor adjustment, not a like-for-like replacement: the result will be less fruity and less sweet.
A few helpful kitchen notes
The meaning of tarator
In this Muğla dish, tarator is the thick cooked sauce of onion, garlic, flour, tomato, red pepper and a souring ingredient. It is not the yogurt-based tarator found in some other regional dishes.
Cowpea substitute
Fresh cowpea pods are the defining ingredient. If they are unavailable, the Culture Portal notes that green beans, broad beans or peas may be cooked with the same sauce; label that version as an adaptation rather than Taratorlu Börülce.
Sour alternatives
The Muğla source allows pomegranate molasses, verjuice or lemon juice. If replacing the molasses, begin with the same volume of verjuice or lemon juice, then adjust after simmering because their acidity varies.
Heat and allergens
No added chili: sweet ground red pepper gives colour without intended heat. The recipe contains wheat flour and is not gluten-free. Check packaged tomato paste, pomegranate molasses and spices for allergen and cross-contact information.
How to store and reheat Taratorlu Börülce
If not serving at once, divide the dish into shallow containers and refrigerate within 2 hours at 4°C/40°F or below. Eat within 3–4 days. Reheat only the portion needed to 74°C/165°F, or serve it cold after keeping it refrigerated. Freezing is not recommended because the pods soften after thawing.
Taratorlu Börülce: questions and answers
Are fresh cowpea pods the same as black-eyed peas?
They come from related cowpea plants, but this recipe uses the fresh green pods rather than the mature dried beans commonly sold as black-eyed peas. Choose young, firm pods with no dry or leathery sections.
Can Taratorlu Börülce be served cold?
Yes. The official Muğla description says it may be served hot or cold. For cold service, cool it in shallow containers, refrigerate within 2 hours and keep it chilled until serving.
Why boil the cowpeas before adding them to the sauce?
Pre-boiling makes the pods evenly tender and provides lightly flavoured cooking water for the sauce. The source also mentions a one-pan version with raw pods, but the two-stage method gives more predictable home-cooking results.
