TÜRKPATENT registration no. 738 defines Afyon Kebabı as cubed beef placed over kebaplık pide moistened with the meat broth. The Türkiye Culture Portal records its place at invitations, celebrations and condolence tables in Afyonkarahisar and notes that it is also called Ramadan kebab because it is especially associated with that month. This home version keeps the registered beef-to-bread ratio and the restrained salt-and-black-pepper seasoning while adapting the braise to a covered household pot.

Ingredients
How to make Afyon Kebabı
Brown the beef
Pat the beef dry. Heat a wide heavy pot over medium-high heat. Add the beef in a single layer, working in two batches if necessary, and cook for 10–12 minutes, stirring occasionally, until its released liquid evaporates and the edges begin to brown. The chuck supplies enough fat for this registered-style dry start; lower the heat if the pot scorches.
Braise until tender
Return all the beef to the pot. Add the water and salt; the liquid should just cover the meat. Bring to a boil, skim any foam, then cover and simmer gently for 75–90 minutes. Add a little hot water only if the meat becomes exposed. Cook until a cube is fork-tender and has passed 63°C (145°F), then stir in the black pepper.
Roast the vegetables
During the final 25 minutes, heat the oven to 220°C (425°F). Put the mild peppers and tomato halves on a small tray and roast for 15–20 minutes, turning once, until softened and lightly blistered. Keep warm.
Warm the pide
Reduce the oven to 180°C (350°F). Spread the pide squares on a tray and warm for 5–7 minutes. They should be hot and slightly dry at the edges, not deeply toasted.
Strain and moisten
Lift the tender beef into a covered bowl. Strain the broth and keep it steaming hot. Arrange the pide squares on a warm platter. Ladle over 240 ml (1 cup) broth, toss gently and wait 1 minute. Add more broth a few tablespoons at a time only until the centers are moist but the squares remain distinct. Rest for 3 minutes.
Assemble and serve
Spoon the hot beef evenly over the moistened pide and scatter with parsley. Serve immediately with the yogurt, roasted mild peppers and tomatoes alongside. Keep any extra broth hot for diners who prefer a softer bread layer.

A few helpful kitchen notes
Pide choice
Traditional kebaplık pide is a plain, yeast-raised Turkish pide. Use a bakery-made plain Turkish pide or a sturdy, unsesamed Turkish flatbread; thin pocket pita softens too quickly and changes the registered texture.
Broth control
The exact amount absorbed depends on the bread. Begin with 240 ml (1 cup), wait 1 minute and add only enough of the remaining broth to moisten dry centers without flooding the platter.
Heat level
No added chili. Black pepper and mild green peppers provide aroma rather than heat; choose genuinely mild peppers for the registered-style serving.
Dietary notes
The pide contains wheat/gluten and the serving yogurt contains dairy. The dish also contains beef, so it is not vegetarian or vegan. Omitting the yogurt removes that garnish but does not make the dish gluten-free.
Food safety
Keep raw beef separate from bread and garnishes. The cubes will exceed the 63°C (145°F) minimum for whole beef during the long braise; continue cooking until fork-tender. Refrigerate within 2 hours and reheat leftovers to 74°C (165°F).
How to store and reheat Afyon Kebabı
Refrigerate the beef with its broth separately from the bread, yogurt and vegetables within 2 hours, using shallow covered containers at 4°C (40°F) or colder. Eat within 3–4 days. Reheat the beef and broth to 74°C (165°F), warm fresh bread separately and assemble only what you will serve. For best quality, freeze the beef in its broth for up to 2 months; do not freeze the assembled bread layer or yogurt.
Afyon Kebabı: questions and answers
Is Afyon Kebabı the same as İskender kebab?
No. Afyon Kebabı uses braised beef cubes and their broth over square-cut pide. It does not depend on döner slices, tomato sauce or hot butter.
Can I use naan or pocket pita?
A thick plain Turkish pide is closest. Naan may be sweeter or richer, while pocket pita collapses quickly; if either is your only option, dry it briefly in the oven and add the broth very gradually.
Can I cook the beef in a pressure cooker?
Yes. After the initial browning, add the water and salt, cook at high pressure for about 30 minutes and allow a 15-minute natural release. Check that the beef is fork-tender before straining the broth.
Why is my bread layer soggy?
The bread was too thin, the broth was added too quickly or the assembled dish waited too long. Use sturdy pide, moisten it in stages and place the beef on top immediately before serving.
