Turkish Zucchini Fritters — Mücver

Turkish zucchini fritters with white cheese, dill and green onion

How to say itMOOTCH-vehr
Approximate pronunciation

Stress the first syllable; Turkish ü is made with rounded lips, and c sounds like j in ‘jam’. The written guide is an approximation for English readers.

Mücver are small Turkish zucchini fritters with crisp, lacy edges and a tender herb-filled center. Squeezing the grated zucchini thoroughly keeps the batter light, while white cheese, dill, parsley and green onion give each fritter its savoury character.

Mücver is made in many forms across Türkiye, and the word can describe fritters made from different vegetables. Zucchini mücver is the best-known version. The Ministry of Culture and Tourism records an Aydın preparation with zucchini, onion, parsley, dill, egg and flour fried in olive oil. White cheese and green onion are also common household additions. GoTürkiye includes mücver among the vegetable-rich foods associated with Aegean cooking, but it is enjoyed far beyond one region. This recipe presents the familiar shallow-fried zucchini-and-white-cheese style.

Ingredients

How to make Mücver

  1. Salt and drain the zucchini

Toss the grated zucchini with 1 teaspoon of the salt in a colander. Set the colander over a bowl and rest for 20 minutes. Transfer the zucchini to a clean tea towel, gather the corners and twist firmly over the sink until no more liquid drips out.

  2. Make the base batter

Whisk the eggs and flour in a wide bowl until no dry pockets remain. The mixture will be thick. Fold in the squeezed zucchini, green onions, dill, parsley, garlic, black pepper and pul biber.

  3. Add the cheese and check consistency

Fold in the crumbled white cheese and the remaining 1/4 teaspoon salt. If the cheese is very salty, omit that final salt. The mixture should hold a loose mound on a tablespoon; if liquid gathers in the bowl, add 1 tablespoon of flour and wait 2 minutes before checking again.

  4. Heat the oil

Pour enough oil into a heavy frying pan to reach a depth of about 1 cm (3/8 inch). Heat over medium to 175°C (350°F). If you do not have a thermometer, a small drop of batter should sizzle steadily on contact without darkening immediately.

  5. Shallow-fry in batches

Drop heaped 2-tablespoon portions into the oil and flatten gently to about 8 cm (3 inches) wide. Do not crowd the pan. Fry for 2–3 minutes per side until deep golden, crisp at the edges and set through the center; an instant-read thermometer in the thickest part should reach 71°C (160°F).

  6. Drain and serve

Lift the fritters onto a wire rack set over a tray and let excess oil drip for 3–5 minutes. Repeat with the remaining batter, allowing the oil to return to temperature between batches. Serve warm or at room temperature, with plain or garlic yogurt if desired.

Ingredient Substitutions

These swaps change flavor or texture as described. Keep the original ingredients for the closest version of the dish.

Pul biber

Use the same amount of mild paprika for color and a gentler flavor. For heat, add a small pinch of chili flakes, then taste; chili flakes can be much hotter.

Turkish white cheese

Use the same weight of firm feta, well drained. Taste before adding salt: feta varies in saltiness. The filling may be tangier and slightly drier.

A few helpful kitchen notes

  • Cheese variation

The Aydın record does not include cheese, while many household versions do. For a cheese-free vegetarian version, omit the white cheese and add 15 g (2 tablespoons) more flour; the fritters will be lighter and less salty.

  • Baked option

For a lighter but softer result, spread the batter 2 cm (3/4 inch) deep in a well-oiled 23 cm (9-inch) baking dish and bake at 180°C (350°F) for 35–40 minutes, until browned and 71°C (160°F) in the center. Cut into squares after 10 minutes of rest.

  • Dietary notes

The base recipe is vegetarian and contains wheat, egg and milk. It is not gluten-free. Check the white-cheese label if animal rennet matters to your vegetarian diet; products vary.

  • Heat level

Mild with 1/2 teaspoon mild pul biber. Omit it for no added chili, or replace it with hot pul biber for a noticeably spicier fritter.

How to store and reheat Mücver

Refrigerate within 2 hours in a covered shallow container and use within 3 days. Reheat on a rack in a 190°C (375°F) oven for 8–10 minutes, until the center reaches 74°C (165°F). A microwave reheats the fritters but softens their edges. Freeze cooked, cooled fritters in a single layer before transferring to an airtight container; reheat from frozen in the oven until hot throughout.

Mücver: questions and answers

Why are my mücver falling apart?

The zucchini may still contain too much water, the oil may be too cool, or the fritters may have been turned before the first side set. Squeeze firmly, keep the oil near 175°C (350°F) and wait for a deep-golden edge before flipping.

Can I make Mücver without cheese?

Yes. Omit the white cheese and add 15 g (2 tablespoons) more flour. Taste the batter seasoning carefully because the cheese normally contributes salt and savoury depth.

Can I bake Mücver instead of frying?

Yes, but the texture becomes softer and more cake-like. Spread the mixture in a well-oiled baking dish and bake at 180°C (350°F) for 35–40 minutes.

Should Mücver be served hot or cold?

Both are common. Freshly fried mücver have the crispest edges, while cooled fritters become softer and work well as part of a meze spread with yogurt.
