Poached eggs, yogurt and a warm red-pepper finish are an established combination in Turkish cooking, not simply a modern brunch topping. Preparations vary: some put the yogurt over the eggs, and others use olive oil rather than butter. Here the eggs sit on strained garlic yogurt and receive a butter-based sauce; serve for breakfast or a light meal without claiming one exclusive regional version.

Ingredients
How to make Çılbır
Prepare the garlic yogurt
Stir the yogurt, grated garlic and salt until smooth. Divide between two shallow serving bowls and spread into a thick layer. Set aside only while cooking, about 15 minutes, so it loses its refrigerator chill; do not heat it directly. Keep the eggs refrigerated until needed.
Heat the poaching water
Put the water in a saucepan about 20 cm (8 in) wide; it should be roughly 5 cm (2 in) deep. Add the vinegar and bring to a gentle simmer. Lower the heat until only a few small bubbles rise. Crack each egg into its own small cup, keeping the yolks intact; discard any egg with a damaged or dirty shell before cracking.
Make the pepper butter
Melt the butter in a small pan over low heat until foaming, without browning it. Take off the heat, stir in all the pul biber and swirl for 15–20 seconds. The butter should turn orange-red and smell fragrant, not scorched. Leave off the heat while poaching; warm very gently if it starts to set.
Poach in two batches
Gently slide two eggs into separate areas of the barely simmering water. Do not stir or make a whirlpool once both eggs are in. For soft yolks, use in-shell-pasteurized eggs and start checking after 3–4 minutes: whites must be opaque and fully set, not jelly-like. If the eggs are not pasteurized, or for a fully cooked serving, poach until both whites and yolks are firm, usually about 6–8 minutes; check doneness rather than relying on time alone. Lift out with a slotted spoon, drain over the pan, then briefly touch the underside of the spoon to clean kitchen paper. Repeat with the remaining two eggs, keeping the first pair loosely covered on a warm plate for these few minutes.
Assemble and serve immediately
Place two drained eggs on each bed of yogurt. Stir the warm pepper butter and divide all of it over the eggs and yogurt. Serve immediately. A cucumber-and-tomato salad works alongside; if adding bread, use gluten-free bread when keeping the whole meal gluten-free.

Ingredient Substitutions
These swaps change flavor or texture as described. Keep the original ingredients for the closest version of the dish.
Pul biber
Use the same amount of mild paprika for color and a gentler flavor. For heat, add a small pinch of chili flakes, then taste; chili flakes can be much hotter.
A few helpful kitchen notes
Egg safety
For soft or runny yolks, choose eggs specifically labelled pasteurized in the shell; fresh or free-range does not mean pasteurized. For pregnant people, young children, older adults and anyone immunocompromised, serve both yolks and whites fully firm. Wash hands and utensils after raw-egg contact.
Yogurt and substitutions
Use thick Turkish süzme yogurt or plain full-fat Greek yogurt, not sweetened yogurt. If using thinner plain yogurt, drain it in the refrigerator first and weigh out 400 g after draining. Olive oil can replace the butter: use 30 ml (2 tbsp), warm gently, then add the pepper off the heat. The dish still contains milk from the yogurt.
Dietary notes
The specified dish is vegetarian and gluten-free, without bread. Use gluten-free-labelled pure pul biber and white wine vinegar, not malt vinegar; check packaged ingredients and cross-contact needs. Contains eggs and milk. This is not a claim of certification or suitability for coeliac disease.
Heat level
Medium with the specified medium-heat pul biber; brands vary. For a mild plate, replace it with 2 g (1 tsp) sweet paprika and no chili. For more heat, add 0.5 g (¼ tsp) hot chili flakes to the butter. Do not use hot flakes at the full base quantity and call the result mild.
How to store and reheat Çılbır
Best assembled and eaten immediately. Garlic yogurt alone can be prepared up to 24 hours ahead and kept covered at 4°C (40°F) or below. Do not plan to store soft-poached eggs or the assembled dish; cook only what you will serve. Discard perishable food left out over 2 hours, or over 1 hour above 32°C (90°F).
Çılbır: questions and answers
Why did the yogurt become watery?
Poaching water carried in with the eggs or yogurt that was too thin are common causes. Use strained yogurt, drain each egg thoroughly and add the sauce just before eating.
Is vinegar essential for poaching?
A small amount helps the whites gather in this method, but freshness and gentle water movement matter too. White wine vinegar is used here; malt vinegar is not a gluten-free substitute.
Can I serve çılbır with firm yolks?
Yes. Keep the same yogurt and sauce and poach until both the whites and yolks are firm. Allow roughly 6–8 minutes, checking the actual eggs; firmer yolks do not change the dish into a different recipe.
