Turkish Melon Seed Drink — Sübye Recipe

İzmir’s Chilled Melon Seed Drink

How to say itSOOB-yeh
Approximate pronunciation

Say ‘soob’ with a rounded oo sound, then a short ‘yeh’; the Turkish ü is formed with the lips rounded. The written guide is an approximation for English readers.

Sübye turns humble dried melon seeds into a pale, fragrant drink with a gently creamy body—without milk. This home-scale method follows the cold extraction used by İzmir vendors: soak the seeds, grind them with sugar, then draw out their flavour in two careful strainings.

Sübye is closely identified with İzmir and is often associated with the city’s Sephardic culinary heritage. İzmir’s official visitor guide describes it as a nearly forgotten street drink made from dried melon seeds and served cold in summer. Recent fieldwork with Sübye makers records the working proportions and the characteristic sequence of washing, soaking, grinding, resting and extracting the seed paste twice. This version scales that method for a household blender while keeping the drink uncooked and distinctly seed-forward.

Ingredients

How to make Sübye

  1. Sort and wash the seeds

Pick through the melon seeds and discard any damaged seeds or debris. Put them in a bowl and rinse with fresh cold water at least 6 times, rubbing them between your fingers, until the water is clear.

  2. Soak for 4 hours

Cover the washed seeds with 500 ml (2.08 cups) of the cold water. Refrigerate for 4 hours, then drain completely and discard the soaking water.

  3. Make a fine seed paste

Transfer the drained seeds to a high-powered blender with the sugar and 100 ml (0.42 cup) of the remaining water. Blend for 2–3 minutes, stopping to scrape down the sides, until the mixture is a thick paste and the shell pieces are no larger than fine specks.

  4. Rest the sweetened paste

Scrape the paste into a clean covered container and refrigerate for 4 hours. This resting period allows the sugar and ground seeds to combine before extraction.

  5. Extract and strain twice

Return the paste to the blender with 450 ml (1.88 cups) cold water and blend for 1 minute. Pour through a damp nut-milk bag, muslin or very fine sieve into a clean jug and squeeze firmly. Return the captured solids to the blender with the final 450 ml (1.88 cups) water, blend again for 1 minute, then strain and squeeze into the same jug. Discard the spent solids.

  6. Chill and serve

Stir the two extracts together, cover and refrigerate for at least 2 hours. Stir or shake well because natural sediment settles, then serve very cold, with ice if you like.

A few helpful kitchen notes

  • The right seeds

Use culinary-grade, dried whole melon seeds with their shells. Roasted, salted or seasoned seeds—and seeds sold for planting—will not give the traditional flavour.

  • Texture

A little sediment is characteristic. For a silkier drink, pass each extraction through damp muslin twice, but do not dilute beyond the stated water or the melon-seed flavour will become faint.

  • Dietary note

The three-ingredient recipe is vegan and contains no gluten ingredients. If cross-contact matters, use melon seeds and sugar that are labelled or otherwise verified for your needs; this recipe does not certify a coeliac-safe kitchen.

How to store and reheat Sübye

Because Sübye is uncooked, refrigerate it promptly in a clean, sealed bottle at 4°C/40°F or colder and use within 24 hours. Shake before pouring. Discard it if it has stood at room temperature for more than 2 hours, smells fermented or looks unusually fizzy. Freezing is not recommended because it separates the emulsion.

Sübye: questions and answers

Can I use shelled melon seeds?

Whole dried seeds are the documented İzmir method and give Sübye its characteristic flavour and body. Shelled kernels produce a different, lighter drink, so they are not a direct substitute here.

Why does my Sübye separate?

Separation is natural in this unhomogenised drink. Keep it chilled and stir or shake just before serving; separation alone does not mean it has spoiled.

Is Sübye a dairy drink?

No. Its milky appearance comes from finely ground melon seeds dispersed in water; the traditional base contains no milk.
