Turkish official culinary sources identify Hünkar Beğendi with Ottoman cuisine. The Edirne version seasons cubed lamb with onion, tomato, vinegar and herbs, then serves it over roasted eggplant thickened with a little flour, milk, butter and kaşar. A Bursa source records another local beğendili kebap version, showing that ingredient proportions and finishing methods vary. This recipe follows the Edirne structure while using clear home-kitchen cues for a balanced sauce and smooth purée.

Ingredients
How to make Hünkar Beğendi
Char the eggplants
Heat a broiler or outdoor grill to high, about 240°C / 465°F. Prick the eggplants in several places and cook, turning every 6–8 minutes, for 25–35 minutes, until the skins are blackened and the flesh has fully collapsed. Transfer to a bowl, cover and rest for 5 minutes.
Start the lamb
Pat the lamb dry and place it in a wide heavy pot over medium-high heat. Cook for 8–10 minutes, stirring occasionally, until its released liquid has evaporated and the edges begin to color. Add the 15 g / 1 tablespoon butter and onion; cook for 3 minutes, until the onion starts to soften.
Braise until tender
Stir in the vinegar, grated tomatoes, thyme, hot water and half the salt. Bring to a boil, then cover and simmer gently over low heat for 50–60 minutes. The lamb must reach at least 63°C / 145°F and rest for 3 minutes; for this dish, continue until a cube yields easily to a fork. Uncover for the final 10–15 minutes if needed so the liquid becomes a spoon-coating sauce.
Prepare the smoked eggplant
Fill a bowl with cold water and the lemon juice. Peel the eggplants while warm, discarding every piece of charred skin. Dip the flesh in the lemon water for 1–2 minutes, then drain and press gently in a sieve. Chop repeatedly with a knife until nearly smooth.
Cook the beğendi
Melt the 30 g / 2 tablespoons butter in a saucepan over medium-low heat. Add the flour and stir for 2 minutes without letting it darken. Whisk in the cold milk gradually, then cook for 4–5 minutes until smooth and lightly thickened. Fold in the chopped eggplant, kaşar, nutmeg, ginger and the remaining salt. Stir over low heat for 3–4 minutes, until glossy and creamy.
Plate and serve
Taste both components and adjust the salt. Spread the hot beğendi on a warm platter or four plates, spoon the lamb and its tomato sauce over the center, and serve immediately.

A few helpful kitchen notes
Regional variation
Some Turkish versions use veal or beef instead of lamb, and garlic or a mild green pepper may be added to the meat. For beef chuck, use the same weight and allow extra braising time if needed.
Dietary notes
The base recipe contains milk, kaşar cheese and wheat flour. For a vegetarian adaptation, a separate vegetable topping would be required; simply omitting the lamb does not reproduce the traditional dish.
Heat level
No added chili. For gentle heat, offer pul biber at the table; it is not part of this base version.
Cheese substitute
If Turkish kaşar is unavailable, use a young, mild melting cheese such as kasseri or low-moisture mozzarella. The flavor will differ, but the purée will remain smooth.
How to store and reheat Hünkar Beğendi
Refrigerate the lamb and beğendi separately in shallow airtight containers within 2 hours, at 4°C / 40°F or below, and use within 3–4 days. Reheat both to 74°C / 165°F; warm the purée gently with a splash of milk and stir often. The lamb can be frozen for 2–3 months for best quality, but freezing the milk-based eggplant purée may make it grainy.
Hünkar Beğendi: questions and answers
Can I roast the eggplants in the oven?
Yes. Broil them close to the heat and turn until the skins blacken and the flesh collapses. A gas flame or charcoal grill gives a stronger smoky character, but the oven method still works.
Why is my beğendi watery?
The roasted eggplant probably retained too much liquid. Drain it thoroughly before chopping, and cook the finished purée over low heat for another 1–2 minutes while stirring.
Can Hünkar Beğendi be made ahead?
The lamb can be made one day ahead and reheated gently. Prepare the beğendi shortly before serving, or reheat it over low heat with a little milk so it becomes creamy again.
