Hatay Zahter Salatası Recipe — Fresh Turkish Herb Salad

Hatay Fresh Zahter Salad with Pomegranate Molasses

How to say ithah-TIE zah-TEHR sah-lah-tah-SUH
Approximate pronunciation

The final dotless ı in salatası is a short vowel made farther back in the mouth than English ee. The written guide is an approximation for English readers.

Hatay Zahter Salatası is a vivid, herb-forward salad in which fresh zahter is gently worked to soften its assertive edge, then dressed with pomegranate molasses and olive oil. Scallions and parsley keep every forkful fresh, while mild red pepper adds warmth without hiding the herb.

Hatay Zahter Salatası of finely chopped fresh zahter, scallions and parsley glistening with pomegranate molasses and olive oil on a ceramic plate

TÜRKPATENT registration No. 1617 identifies this salad with Hatay and records a preparation based on zahter, green or dry onion, parsley, pomegranate molasses, olive oil, red pepper and salt. The document also describes rubbing and rinsing the fresh zahter to tame its bitterness. This four-serving version scales the registered proportions for a home kitchen, chooses green onions, and leaves out the optional tomato and garlic so the central zahter flavour stays clear.

Ingredients

How to make Hatay Zahter Salatası

  1. Wash and pick the herbs

Wash your hands, then rinse the zahter, green onions and parsley thoroughly under cool running water without soap. Drain well. Pick the zahter leaves and tender tips from the tough stems, keeping the tender sprigs, and discard the tough stems.

  2. Tame the zahter

Put the picked zahter in a large bowl, sprinkle it with 15 ml (1 tbsp) cool water and gently rub the leaves between your fingertips for 2 minutes. Rinse again under cool running water, then spin or pat very dry so the dressing will cling.

  3. Chop the greens

Chop the zahter medium-fine rather than mincing it. Thinly slice the green onions and finely chop the parsley. Add all three to a wide mixing bowl and toss to distribute them evenly.

  4. Dress and work the salad

Add the pomegranate molasses, olive oil, red pepper powder and salt. Toss, then gently rub and turn the mixture with clean hands for 1–2 minutes, just until the zahter softens slightly, darkens a shade and becomes evenly glossy. Do not crush it into a paste.

  5. Rest and serve

Let the salad stand for 5 minutes so the sharp, tart and herbal flavours settle. Taste and toss once more, then spread it on a shallow plate and serve at room temperature as a salad or mezze.

Ingredient Substitutions

These swaps change flavor or texture as described. Keep the original ingredients for the closest version of the dish.

Pomegranate molasses

If unavailable, omit it and add lemon juice gradually to taste. This is a flavor adjustment, not a like-for-like replacement: the result will be less fruity and less sweet.

A few helpful kitchen notes

  • Buy fresh zahter

Fresh zahter is the leafy herb Thymbra spicata, sometimes sold as spiked savory or wild thyme at Turkish and Levantine markets. A jar of dried za'atar seasoning is a blend and will not produce this salad.

  • Registered proportions

The TÜRKPATENT specification gives quantities for 500 g zahter. This recipe uses 40% of those amounts and treats bunch-based herbs as practical home weights; tomato and garlic are listed as optional in the registration and are omitted here.

  • Heat level

Use mild Turkish red pepper powder for gentle warmth. Hot pul biber or cayenne will make the salad distinctly spicy, so substitute only if that is the result you want.

  • Gluten check

The ingredients contain no wheat by design, but people managing celiac disease should verify that the pomegranate molasses and ground pepper are labelled gluten-free and protected from cross-contact.

How to store and reheat Hatay Zahter Salatası

This raw herb salad is best served promptly. Refrigerate it in an airtight container within 2 hours at 4°C/40°F or below and eat within 2 days for the best texture. Do not freeze; thawing makes the herbs watery and limp.

Hatay Zahter Salatası: questions and answers

Can I use a dried za'atar blend instead of fresh zahter?

No. Dried za'atar blends usually contain dried herbs, sesame and sumac, while this salad depends on the texture and aromatic bitterness of fresh zahter leaves.

Why is the zahter rubbed and rinsed?

The registered Hatay method uses rubbing and rinsing to soften the fresh herb's bitter edge. Dry it thoroughly afterward so the pomegranate molasses and oil coat the leaves rather than becoming watery.

Can I prepare the salad ahead?

You can wash, pick and dry the herbs several hours ahead and refrigerate them in a covered container. Chop and dress them close to serving so the salad stays lively rather than turning limp.
