Bodrum Beef and Crispy Potatoes — Çökertme Kebabı

Seared Beef over Crispy Potatoes and Garlic Yogurt

How to say itchoh-KEHRT-meh keh-BAH-buh
Approximate pronunciation

Ç sounds like ch; the final ı in kebabı is a short, relaxed vowel. The written guide is an approximation for English readers.

Bodrum Çökertme Kebabı is built in three contrasting layers: very crisp matchstick potatoes, cool garlic yogurt and hot strips of seasoned beef with their buttery pan juices. The pleasure of the dish comes from serving those textures together before the potatoes have time to soften.

Bodrum Çökertme Kebabı with seared beef strips, garlic yogurt and crisp shoestring potatoes

Bodrum Çökertme Kebabı was registered by TÜRKPATENT as geographical indication No. 1759 on 14 August 2025. The register connects it with Bodrum, where it has been produced since 1964, and defines its key components and method: fine fried potatoes, thick but flowing garlic yogurt, quickly seared beef strips, butter, olive oil, paprika, cumin, mint and thyme, with tomato, green pepper and arugula alongside. This home-sized recipe keeps that registered sequence and presentation while giving practical temperatures for an ordinary kitchen.

Ingredients

How to make Bodrum Çökertme Kebabı

  1. Prepare the beef

Place each beef steak between sheets of parchment and pound it to about 3 mm / 1/8 inch thick. Pat the surface dry. Keep the pieces chilled while you prepare the potatoes and yogurt.

  2. Make the garlic yogurt

Whisk the strained yogurt and garlic until smooth. Add the cold water a tablespoon at a time to make a thick but flowing sauce; it should hold soft folds rather than run like milk. Cover and refrigerate until plating.

  3. Cut and soak the potatoes

Cut the potatoes into 2–3 mm matchsticks, or run them in one direction over the coarse side of a grater to make long, fine strands. Soak in a large bowl of cold water with half the salt for 10–15 minutes to release surface starch. Drain, rinse once and dry extremely well between clean towels.

  4. Fry until crisp

Heat the frying oil in a deep, heavy pan to 180°C / 355°F; the pan should be no more than one-third full. Fry the potatoes in small batches for 3–5 minutes, separating the strands, until crisp and deep golden. Drain on a rack or paper towels and keep uncovered in a warm place.

  5. Sear and slice the beef

Heat a cast-iron skillet until very hot, about 200–250°C / 390–480°F at the cooking surface. Add half the olive oil. Sear the thin beef pieces for about 30 seconds per side and transfer to a board. Cut across the grain into thin strips about 9–10 cm / 3 1/2–4 inches long.

  6. Finish the beef

Add the butter and remaining olive oil to the hot skillet. When the butter foams, return the beef with the remaining salt, paprika, cumin and black pepper. Toss continuously for about 2 minutes, then add the mint and oregano just before taking the pan off the heat. Check the thickest strip reaches at least 63°C / 145°F, then rest the beef for 3 minutes.

  7. Layer and serve

Spread the crisp potatoes over a wide platter. Spoon the garlic yogurt over only part of the potatoes. Pile the hot beef on top and pour over the buttery spiced pan juices. Arrange the tomato wedges, sliced green pepper and arugula at the edge, and serve immediately.

A few helpful kitchen notes

  • Heat level

No added chili. Sweet paprika and mild green peppers provide color and aroma without significant heat. For a hotter variation, replace 1 teaspoon of the sweet paprika with 1 teaspoon pul biber.

  • Keep the potatoes crisp

Water is the enemy of frying. Dry the soaked potato strands thoroughly, do not crowd the oil, and leave them uncovered after frying. Add yogurt only at the last moment.

  • Beef doneness

The registered method cooks very thin steak quickly in a hot cast-iron pan. For food safety, verify the thickest strip reaches 63°C / 145°F and give it a 3-minute rest.

  • Dietary check

The dish contains dairy. It has no intentional wheat ingredient, but yogurt and packaged spices can vary; check labels if avoiding gluten. It is not labelled gluten-free because product status and cross-contact are not established.

  • Frying oil

Use a neutral high-heat oil and monitor it with a thermometer. Let used oil cool completely before straining for reuse or disposing of it; never pour hot oil into a container or down the drain.

How to store and reheat Bodrum Çökertme Kebabı

For the best texture, serve immediately. Refrigerate leftovers within 2 hours at 4°C / 40°F or colder, preferably storing beef, potatoes and yogurt separately, and use within 3–4 days. Reheat beef and potatoes separately until the beef reaches 74°C / 165°F; use an oven or air fryer for the potatoes. Keep the yogurt cold and add it after reheating. Freeze the cooked beef for up to 2 months for best quality, but do not freeze the assembled dish.

Bodrum Çökertme Kebabı: questions and answers

Which cut of beef is best for Çökertme Kebabı?

Lean top round, sirloin or another tender steak cut works well. The registered Bodrum method names tranç and sokum; for home cooking, the important step is pounding the beef thin and cutting the cooked pieces across the grain.

Can I use Greek yogurt?

Yes. Whole-milk Greek yogurt is a practical substitute for Turkish strained yogurt. Whisk it smooth and add only enough cold water to make it thick but spoonable.

Can I bake or air-fry the potatoes?

You can, but the texture differs from the registered deep-fried version. Toss the very dry matchsticks with a little oil and cook in a single layer at 220°C / 425°F until crisp, turning once.

How do I stop the potatoes becoming soggy?

Keep the fried potatoes uncovered, hold the yogurt cold and finish the beef first. Assemble immediately before serving and cover only part of the potatoes with yogurt and pan juices.
