Gaziantep’s Dried Vegetables: From Hanging Strings to Dolma
Strings of hollow eggplants and red peppers offer a useful introduction to Gaziantep’s pantry. They are ingredients waiting for a later meal: the vegetable has already been shaped into a container before it reaches the cooking pot. Looking closely at these dried shells reveals a connection between seasonal preparation, regional produce and dolma. It also helps explain why a dried pepper and a fresh pepper should not be treated as identical starting points.

A pantry prepared across the seasons
Gaziantep’s Provincial Directorate of Culture and Tourism places kuruluklar, dried vegetables, alongside pastes, preserves, bulgur and pickles in its account of winter preparations. It describes work shared with relatives and neighbours over the warmer months. That account records a tradition of household preparation; it should not be read as a description of every household today.
For a visitor or home cook, the useful idea is that the pantry contains decisions already made. A hollow shell suggests stuffing, whereas a paste suggests a different kind of preparation. A string of vegetables is therefore more informative than a colourful souvenir. Its shape tells you something about the dish it is intended to become, even before you read a recipe.
Eggplant and pepper follow different drying paths
The registered Antep Kuruluk Patlıcanı comes from Oğuzeli, Nizip, Karkamış and Araban. Its specification describes eggplants harvested in August and September, cut, hollowed and threaded onto strings. Wind and shade are important: direct sun can damage the product. The Culture Portal also emphasises the thin walls and softness after cooking that distinguish this dried eggplant.
Gaziantep’s municipal account of Antep Dolmalık Biber Kurusu describes another product: hollow red stuffing peppers dried using sunlight. Their dry texture is hard and brittle. These descriptions make a useful distinction when looking at a market display. The same hanging format does not mean that every vegetable follows the same treatment. Here the strings hold a prepared ingredient, not a universal drying method to copy into any climate.
Summer dolma has its own identity
Gaziantep’s Antep Allı Yeşilli Dolma, also called Nakışlı Dolma or Yaz Dolması, uses fresh vegetables. The Culture Portal connects its colourful appearance with the mixture cooked in one pot and records its association with sahre picnics and special gatherings. Rice or bulgur may be used, with sour ingredients among the possible additions. This is a distinct summer preparation, rather than simply another name for dried dolma.
That seasonal contrast is helpful when reading menus. Ask whether the vegetables are fresh or dried, then ask about the filling. Neither the word dolma nor the colour of a pepper tells you whether a dish contains meat. The ingredient and the preparation deserve separate attention. A dried shell is also different from a leaf used for wrapping, even if both appear on a generous shared platter.
Bring the distinction to your own table
The linked Etli Biber Dolması and Zeytinyağlı Biber Dolması recipes offer two complete fresh-pepper preparations to explore. They are not recipes for rehydrating dried shells, and their cooking directions should remain attached to the ingredients they specify. If you buy kurutmalık vegetables, look for instructions intended for that product rather than exchanging fresh and dried peppers piece for piece.
For a simple menu, choose one dolma preparation and add the linked Cacık as a cool accompaniment. This is a practical pairing suggestion, not a fixed Gaziantep service rule. Keep the conversation at the table focused on what can actually be noticed: the vegetable’s shape, the filling and the texture after cooking. Those details make the pantry tradition easier to understand without reducing a varied regional cuisine to a single recipe.
